Previously featuring only one Black Bag edition coffee we are so stoked to introduce this super special Colombia Pacamara hybrid variety bean to our Black Bag line.  Though all the coffee we roast is rated specialty coffee from it's cup scoring, our Black Bag line is our most elite of the specialty coffee we roast.

The first thing you'll notice is how insanely large the Pacamara bean is.  The Pacamara coffee plant is a special hybrid of the Pacas & Maragogipe plants originally developed in El Salvador birthing the name Paca-Mara as the official hybrid name.  The hybrid took the Salvadoran Institute for Coffee Research about 30 years of cross breeding the two varieties to get it just right.  Once farmer Juan Pablo of Ciudad Bolivar in Colombia got his hands on this bean in 2015 it took a few years for it to produce it's first cherries only for it to be a total bust as the location they originally planted the Pacamara on the Finca La Luisa farm was not suitable to go the special hybrid variety.  He changed locations exposing the plant to a different microclimate with different elevation and sun exposure and the result was peak growing conditions.  This special bean represents 7 years of trial and failure until they were able to get it right.  The flavors are fruity and complex with chocolatey notes with a slightly sweet & tangy body.
