Back with another Ethiopia banger. It's so hard to miss with a good natural from the Shakiso region of Ethiopia. These coffee cherries have been placed in water to soak for 12 hours which the farmers/producers use as a method of starting the sugar reaction process creating a sweeter cup. This method also helps with quality control making it easy to identify "floaters" rising to the surface that need to be removed. After the cherry is laid on floating beds with access to air from both sides in an area that receives high winds aiding to the drying process. These cherries dry for about 15 days before they skin is removed helping ensure the sugars from the cherry are sealed into the bean itself which you'll be able to taste in this sweet & bright cup.
